We are going to detail how to prepare delicious yogurt cupcakes at home, which we will prepare in a simple way as you will see if you dare to make it. We will make the dough for the cupcakes using a yogurt of the flavor that each one prefers, so you can always vary it to get cupcakes of different flavors. As for the coverage of them, you can also decorate them in many ways, although it is best to do it with a buttercream of any kind.
First we are going to prepare the base of the cupcakes, which is what will take us the longest, and while they are baking you can take advantage of it to make the topping. First of all what we always recommend is to leave all the ingredients ready, already weighed and measured, in order to make the mixture in one go and make it in the most comfortable way, so we can put the cupcakes in the oven with the freshly made dough, which it is always the most appropriate to achieve the best result.
We are going to sieve the flour to remove any lumps it may have, and on the butter it is best to leave it out of the fridge a few hours before using it, so that it is soft. Once we have the ingredients prepared, we will turn on the oven to preheat it to 180ºC (356ºF), and we also leave the molds that we are going to use ready, with their cupcake capsules placed, to fill them as soon as we finish preparing the mixture for the base of the cupcakes.
In a bowl or container we are going to add the butter, which must be soft to mix it well, along with the sugar, and mix it all with the stick mixer, until everything is well mixed homogeneously. Next we add the eggs, the vanilla essence and the yogurt, and we beat again for a long time until all the ingredients are perfectly integrated. Finally we add the flour and the yeast, little by little and without stopping to beat.
When we have a very homogeneous mass and without lumps we are going to pour it into the molds, filling about two thirds of the capsules, to prevent the mass from coming out from the sides when rising. We put in the oven when it is at the desired temperature and we will keep between 18 and 20 minutes, taking care not to burn them, after which time we check that the inside is not raw by clicking with a toothpick or the like, if it comes out dry they are made but We leave them for a few more minutes, and when the cupcakes are ready we take them out of the oven and let them cool without the molds, on a rack, so that they cool well for about 10 or 15 minutes.
While the cupcakes are baking, we take the opportunity to make the topping that we are going to use to decorate our yogurt cupcakes, for example a buttercream, of which we show you some variants on the initial page, where you can learn how to make it step by step, or use some that you like. Once the cupcakes are cold, we decorate them and we can serve them to eat. We hope you like the recipe and that your guests or family like it.
