We start by putting the walnuts in a mortar and crushing them into small pieces. We remove them from the mortar and reserve them for later. Next we are going to put the yogurt, sugar and sunflower oil in a bowl using the yogurt glass as a measure. Once we get that the dough is well mixed, we are going to add the raisins, the crushed nuts and a touch of ground cinnamon. We will remove with a large spoon gently, since we do not want to crush the nuts, simply distribute them throughout the dough of the Cupcakes. We have to preheat the oven to 180ºC (356ºF) before putting them in, so while we can prepare the tray in which we will bake our cakes. We place the paper capsules in which we will pour the resulting dough, which will be the base of our Cupcakes.
We put the tray in the oven when it finally reaches 180ºC (356ºF), and we keep it inside for about 20 minutes or so. A couple of minutes before the end of the baking, we prick the Cupcakes to check that the interior is ready. You can use a toothpick, and if it comes out clean, we can already remove them from the oven. When we take them out, let them cool slightly outside the oven and remove them from the mold afterwards so that they cool completely.
The top decoration of these Cupcakes can be made with some crushed nuts and tossed on top, either when we put the baking tray, or once they are baked. But if you prefer you can make a soft cream or a light buttercream, as always depends on our tastes and how you want to make the top of the Cupcakes.
