Banana Cupcakes Ingredients:

- 250 grams (9 oz) of flour
- 250 ml (8½ oz) of milk
- 275 grams (9½ oz) of sugar
- 150 grams (5½ oz)of butter
- A couple of bananas
- Two large eggs
- A tablespoon of yeast
- Banana extract
- Buttercream

Preparation of Banana Cupcakes:

We present you the complete recipe to prepare some wonderful Banana Cupcakes at home. These Cupcakes are usually prepared so that the smallest of the house snack some complete sweets with fruits and if they collaborate to make them it is an incredible experience.

We turn on the oven so that it takes temperature while we prepare the dough for the Cupcakes, we put a temperature of 180ºC (356ºF). Now we are going to pour the sugar in a wide bowl, add the slightly melted butter and mix thoroughly to mix both ingredients. You can do it by hand, with electric rods or a kitchen robot.

Next we are going to add the two eggs to the butter and sugar mixture, it is better to do it one by one so that they are better integrated into the mixture. Then we are going to add half the amount of flour, better sift it and half the milk, and stir until everything is mixed well. Then we incorporate the other half of milk and flour and begin to beat with intensity until obtaining a dough that is as homogeneous as possible. If you use a container under, be careful that putting the rods too fast, can be very splashed.

The next step will be to peel the banana and cut it into small pieces. We put the pieces of banana in a bowl and crush them with rods or a mincer until you get a kind of crushed banana porridge. We add that banana porridge to the previous mass, we add the banana extract and the baking powder and mix with the rods as best as possible, so that all these ingredients are integrated and a very homogeneous mixture remains.

Once this final mass is obtained, we are going to fill the molds for the cupcakes, where we will have previously placed the paper capsules and bake them for about 20-25 minutes, depending on each oven. It is advisable to check a few minutes before finishing that the interior is well done, with a toothpick for example, and if so, take it out so that they do not pass. Once out of the oven, we will remove the tray and leave it at room temperature to cool, and then remove the Cupcakes from the mold, until we begin to decorate them on top.

For the top we can use almost any type of coverage, we have tried to make a normal buttercream to which we add a little banana extract and a touch of yellow coloring. With the pastry bag we decorate the top of the Cupcakes and place a slice of banana on top as a final ornament, or if you prefer you can use a banana-shaped jelly bean, which will give it a fun and more attractive touch for children.
