Light Cupcakes Ingredients:

Ingredients for the base:
- 300 grams (10½ oz) of wheat flour
- Two tablespoons of unsweetened cocoa
- A teaspoon of yeast
- 250 ml (8½ oz) of skimmed milk
- 120 ml (4½ oz) of sunflower oil
- A whole egg
- Four egg whites
- A teaspoon of vanilla essence
- A pinch of salt
- 100 grams (3½ oz) of light apple jam
- A tablespoon of sweetener powder
- One teaspoon of baking soda
- A teaspoon of vinegar

Ingredients for frosting:
- 300 grams (10½ oz) of light cream cheese
- 225 grams (8 oz) of plain yogurt
- One teaspoon of powdered sweetener

Cupcakes are normally hypercaloric sweets, due to the ingredients used in their preparation. You can also make some variants with much less calories, without having to sacrifice all the flavor of them. There are many ways to prepare them, but we are going to give you a recipe that we have tried and of course you can say that they have much less calories but they are very rich Cupcakes. Let's go with the step-by-step recipe to facilitate your preparation. The first thing we have to do is mix and sieve the flour, yeast, salt and cocoa powder, to remove impurities and possible lumps that appear due to their caking, especially if they have been in the package for a long time, and more usually flour.

In another bowl beat an egg together with 4 more whites, and add the vanilla essence until well mixed. We add little by little the mixture that we sift initially, without stopping moving so that a homogeneous paste is formed. If you can use an automatic rod mixer, it will surely compensate you, because the result is better and it is easier.

Then add the light jam, the sweetener, the milk and the oil, stirring everything again until everything is well integrated. Finally, in a bowl, beat the vinegar together with the baking soda, until there is a foamy liquid, and add it to the previous mixture.

We put the oven to preheat to 180ºC (356ºF), and while it reaches that temperature we will prepare the baking pan, to which we will place the decorative paper capsules for the Cupcakes. With our dough already ready, we are going to fill the Cupcake molds and then put in the oven for approximately 18-20 minutes. Before removing you have to verify with a toothpick or skewer that the interior is not undercooked, if it is not, leave it for a couple of minutes more.

While we are baking, we begin to prepare the cream to decorate our Cupcakes. To do this, we mix the light natural yogurt, cream cheese and powdered sweetener well, until we get a paste that is homogeneous and creamy. If you want, you can add some coloring or add chocolate chips or pieces of it, or any other ornament that we can think of, the possibilities are almost limitless, better some fruit has less calories.

The frosting that we have done before can be spread on top of the Cupcakes, or if we prefer to use a pastry bag, you have to check that the dough is compact enough to keep the garnish and not fall apart before eating these cakes.
