How to make Coconut cupcakes

 Coco Cupcakes Ingredients:

- 125 grams (4½ oz) of unsalted butter +     200 grams (7 oz) for topping
- 100 grams (3½ oz) of grated coconut +     150 grams (5½ oz) for topping
- 150 grams (5½ oz) of sugar
- 150 grams (5½ oz) of wheat flour
- 200 grams (7 oz)of icing sugar for     topping
- 50 ml (1½ oz) of cream for cooking
- Two large eggs
- One teaspoon of chemical yeast
- A teaspoon of coconut essence for     coverage

These coconut cupcakes are quite easy to prepare but are very tasty and striking with the topping we prepare for you. They are a good option for your parties and celebrations, so we encourage you to prepare them following our instructions.

We begin by preparing the molds in which we will bake the cupcakes, placing the paper capsules on top of them. We will also preheat the oven to 190ºC (374ºF) and start preparing the dough.

In a suitable bowl we pour the chopped butter, better if it is a little soft to mix it better, you have to take it out a few hours before the refrigerator. Add the grated coconut and sugar, and beat with a few rods or a blender until the ingredients mix well and leave a homogeneous mass. Then we add the liquid cream and the eggs and beat again to integrate them into the previous mixture.

Next we sift the flour and mix it with the yeast, and we put that mixture little by little in the previous container. We will be adding this mixture little by little on the previous mass, never suddenly, and without stopping to beat so that it is incorporated without forming lumps and everything is homogeneous.

Now we pour the resulting mass into the molds that we had prepared, filling at most about three quarters of them. With the oven at the desired temperature, we put our molds with the dough and keep it for about 15-16 minutes or so, until they are well done but without burning, check if they are well done inside, we can prick with a knife, a toothpick or similar, if they come out dry they are done but you have to leave them a little longer in the oven.

Meanwhile we will make a coconut topping that fits these cupcakes perfectly. To make it we add the butter, which is soft, with the grated coconut, the icing sugar and the coconut essence. We beat everything until there is a creamy mixture. With it we will cover the coconut cupcakes on top once they have been made and we have removed them from the mold and cooled to room temperature.
