ICE CREAM CUPCAKES RECIPE
Ice Cream cupcakes Ingredients:
- 112 grams (4 oz) leavened / biscuit flour (can be substituted with 110 g normal flour + 5 g chemical yeast)
- 112 g (4 oz) plain flour
- 112 g (4 oz) butter at room temperature
- 200 grams (7 oz) sugar
- 3 eggs at room temperature
- 125 ml (4½ oz) milk
- 112 grams (4½ oz) mashed banana
- 1 Teaspoon vanilla extract

In a bowl mix the two types of flour (or the flour plus the yeast) and reserve. In another bowl beat the butter on medium speed until smooth and creamy. We continue beating adding the sugar little by little, until the mixture is fluffy, it will be approximately 3 minutes. We add the eggs one by one, always beating and reserve. In a third bowl we mix the milk, the crushed banana and the vanilla essence.
Now it is time to mix all the preparations. We take the bowl with the butter mixture and add the dry ingredients three times, alternating with the milk mixture and whisking a little after each addition, so that the ingredients are mixed. Now that we have the mix ready, we can fill the cones.
As you can see, these little glasses or ice cream cones are not the classic ones in point, but can stand up because they have a base. They can be bought in some supermarkets, in confectionery stores or in ice cream parlors. We take our cones and a cupcake mold, and we put a cone in each space of the mold. If we do not have a cupcake mold, we can take a disposable aluminum pan, turn it around and cut several holes in the bottom to put the cones in them and they will stand up, the objective is to be able to put them all together in the oven and that don't move and fall. Once we have the source ready, we put the mixture in a pastry bag or freezer bag and fill each cone up to 3/4. We take the oven preheated to 180 ° (356ºF) for about 20-25 minutes, until when you insert a toothpick or similar in the center of the cone it comes out clean. Remove from the oven and let cool for 10 minutes in the dish and then completely on a rack.
Do not worry if the dough has been spilled a bit on the sides, you can match it with a knife, since when decorating the cupcake it will not be noticed. Don't worry about the cone burning either, it just gets a tad more golden and crisp.
