How to make Vegan cupcakes

Vegan Cupcakes Ingredients:

Ingredients for the base:
- 125 grams (4½ oz) of coconut oil
- 125 grams (4½ oz) of brown sugar
- 125 grams (4½ oz) of gluten-free flour
- 200 grams (7 oz) of applesauce
- 10 grams of yeast
- Juice of a lime

- 8 tablespoons of icing sugar
- 2 tablespoons of cocoa powder
- A ripe avocado

Preparation of Vegan Cupcakes:

Here we show you how to prepare some great Vegan Cupcakes, made without products of animal origin, to be consumed by people who follow this type of diet, but maintaining a great flavor, which is surprising. You can do it in a rod mixer, in a Thermomix, etc., and it is also very nice to do it with the children, they will love it and of course you will too.

This recipe is a very special recipe, it is mainly aimed at people who have a vegan diet and want to enjoy some delicious Cupcakes. In our family gatherings there was always a person who did not eat our Cupcakes for that reason, so we began to try several recipes of this type and in the end we have chosen this version of our own. We will detail how to do it to make your task as easy as possible.

The first thing we are going to do to prepare this recipe is to prepare the applesauce, using the type of apples that we like the most, rather sweet or more acidic, as you prefer. Peel the apples, chop them and put them in a saucepan. Add the juice of a lime, two tablespoons of brown sugar and a little coconut oil, and heat everything until the apples are very soft.

When they are ready, we take the cooked apples and make a puree with them that is very fine. We will use this puree to make the base of our Vegan Cupcakes. Then we add the rest of the brown sugar and coconut oil to the puree, in addition to the yeast and flour, which we will have previously sieved in case they have lumps and are fine. We mix all of the above as best as possible, being very important to avoid lumps.

We put the oven to preheat to about 170ºC (338ºF), if we have not done it before, and while it reaches that temperature we are going to prepare the oven tray with the papers for Cupcakes. Pour the dough into the corresponding molds, without exceeding about two thirds, leaving the rest free. With the oven at the indicated temperature, we will bake our Cupcakes for about 20 minutes, checking that they are well done inside before taking them out of it. Let cool a bit and then remove all from the mold and reserve.

During the time that the baking lasts, we can prepare our frosting. To do this we are going to peel the avocado, which must be very ripe, and mash it with the help of a mash. We add the cocoa powder and icing sugar, mixing everything very well. We put this dough in the pastry bag and use it to decorate the cupcakes. If you want you can add some other ornament, but as we indicated we are perfect. Instead of avocado you can use another fruit that you like more, strawberries, peaches, etc.
