In this recipe we will detail the preparation of some delicious apricot cupcakes, so that you can easily prepare them at home for your snacks or celebrations. Once you have them ready you can accompany them with the coverage that you like or prefer to prepare for them. You can use the buttercream topping that we detail on the home page, it is easy to prepare and combines well with any cupcake, or you can make some other one, you can put a piece of fresh apricot on top of the buttercream, an apricot gummy, etc., what you like the most.

And we start already with the preparation of these apricot cupcakes leaving all the ingredients measured and heavy, to have them all at hand when we need them. As for the flour we are going to sift it previously with a strainer, to remove any lumps or impurities that they may have. The apricots that we will use in this preparation will be dried apricots, also known as apricots, which you can easily find in any supermarket.

We will start preparing the molds for the cupcakes, placing the paper covers in the holes to leave it ready. We also take advantage and turn on the oven to preheat it to 180ºC (356ºF), so while we make the recipe it will reach the desired temperature. Next we are going to place the apricots cut into small pieces in a good-sized container, and over them we will pour the freshly squeezed orange juice, or bottle if you do not have fresh oranges.

In another container, mix the two types of sifted flour, add the ground cinnamon and brown sugar, and when finished, stir well to mix everything. In the glass of the mixer we are going to mix the milk, the slightly melted butter and the egg with the rods, until leaving a uniform mixture, and we add it over the mixture of orange juice and apricots, and we will mix well. Now we will be adding the mixed dry ingredients, but little by little and without stopping to beat, so that they are integrating well without forming lumps.

Once we have the dough done, we will fill the molds of the cupcakes with it, without filling them completely, covering two-thirds more or less. If you want, you can put a few pieces of dried apricots on top. We put the mold in the oven, which will already be at a good temperature and leave about twenty minutes to bake well. When they are well made on the outside and inside (check if they are made on the inside, with a toothpick for example) we take them out and let them cool at room temperature outside the mold, and better if we place them on racks to cool them well, with about 10- minutes is enough. Meanwhile we prepare the topping we want and when they are already cold we will serve them, you will see how rich these apricot cupcakes are.
