- 150 grams (5½ oz) of pastry flour
- 100 grams (3½ oz) of sugar
- One teaspoon of chemical yeast
- A dash of soft olive oil
- A splash of white rum
- Juice of a lime
- Skin of a lime
- A lemon yogurt
- A medium egg
- A pinch of salt
- Some fresh mint leaves
- Two tablespoons of brown sugar
- A little green coloring (Optional)

It is a recipe that contains alcohol, so it is not suitable for the smallest of the house, but it is ideal for when you have meetings with your friends or family, you are going to surprise them with them. Below we detail how to do them step by step.

We get down to work with the preparation of these Mojito Cupcakes starting with squeezing a lime and mixing the juice of it with a splash of white rum, just enough to give it flavor, but without going overboard. We also add the lemon yogurt and mix all these ingredients well, until they are well integrated into a homogeneous mixture. It is best to use a few rods to mix everything, a few manual rods is enough to get a good result.

After mixing these ingredients well, we are going to sift the pastry flour, to leave it well sifted and remove any lumps and impurities that it may have. In the same container where we have sifted it, add a pinch of salt, the baking powder and sugar, and also add some chopped fresh mint leaves and the skin of the grated lime, which we can do before squeezing, to take advantage of the same. We remove to mix all these dry ingredients.

In a different bowl we are going to pour the liquid mixture that we had formed, incorporate the egg, a splash of soft olive oil and beat well to mix everything. Then we incorporate the flour mixture and we incorporate it as best we can, but always adding it little by little and without stopping stirring, so that it mixes well and without forming lumps. When finished we will turn on the oven at 180ºC (356ºF) to preheat it while we finish.

We are going to distribute the dough that we had formed in the molds chosen to make the Cupcakes, previously placed the mold papers in them. We take them no more than two thirds and when the oven is ready we put them to bake them for about 20 minutes, after which time we check that they are well made inside by pricking with a toothpick and well made outside, and if so we remove them and let cool outside the mold, so that they cool well on all sides, with about 10-15 minutes is enough.

Meanwhile we are going to finish preparing a glaze to cover our Mojito Cupcakes on top, which we will do by pouring a couple of tablespoons of brown sugar in a container. Add a few chopped mint leaves, a splash of white rum, a little green coloring to taste and a little grated lime peel. We mix all of the above well until it forms a pasty mixture. If necessary, we will add more sugar until it is very dense. Finally we decorate the Cupcakes already tempered with this glaze, and let cool completely to eat these rich Mojito Cupcakes.

For garnish we can use a mint leaf, a little scratch of the lime, we can also put a small straw simulating the mojito, or whatever you like.
